Castello di Brolio, Olio Extra Vergine DOP del Chianti Classico
OLIVE GROVES: The olive groves at Brolio are located at 350-500m a.s.l.
GROWING SEASON: A complex year, above all due to the great drought and the heat of the summer that caused many olives to fall before ripening. The harvest was thus certainly less abundant than that of 2020.
OLIVE HARVEST: The olives were harvested by hand with olive rakes on the second ten days of October 2022.
CRUSHING: The olives were processed within eight hours of harvesting in a continuous-cycle mill. The pasta was churned for 30 minutes at 25°C.
STORAGE:Upon arrival at the storage area, the oil was filtered and stored in stainless steel containers in an environment protected from the air.
TASTING NOTES: Green color with golden hues. Intensely fruity nose with hints of cut grass and green olive. In the palate is rich, fluid, with an excellent ratio between bitterness and spiciness, and a fresh almond aftertaste, giving this oil persistence and a long finish.
